3rd European Symposium on Microbial Lipids:
Model Organisms and Biodiversity
28-31 May 2014, Hamburg, Germany

Dear Reader,
in the past decades considerable progress in lipid research was achieved with so-called model organisms such as Escherichia coli, Saccharomyces cerevisiae, Mus musculus, and Arabidopsis thaliana. These organisms were used to investigate the general und fundamental questions how lipids are biosynthesized and trafficked, how they form membrane structures and how they function on a molecular and cellular level. In addition, specialized functions of lipids, e.g. in pathogen/host interactions, were determined in several other organisms.

However, the use of only a few model organisms has some limitations for lipid research, i.e.
i) the model organisms were not selected for their universality regarding lipids, but for other reasons (fast growth, easy handling, availability of genetic tools), and
ii) growing E. coli and S. cerevisiae in axenic cultures does not reflect real life of organisms with the multiplicity of interactions between cells of different organisms.

Recent developments in genetics, lipidomics and other techniques enlarged the amount of eukaryotic and prokaryotic microbial species under investigation and broaden the basis of lipid data available for these organisms. Therefore, the aim of the workshop Microbial Lipids: Structure and Function of Cellular Surfaces is to bring together the knowledge about the classical model organisms with that about the diversity of microbial life.

The workshop will reflect lipid science on archea, cyanobacteria, chloroplasts, pathogenic and non-pathogenic eubacteria, yeasts, filamentous fungi, protists and algae. The workshop will also address the role of lipids in pathogen/host, and symbiotic and endosymbiotic interactions, as well as in complex communities (e.g. biofilms). The meeting of experts dealing with the whole microbial biodiversity will enable new perspectives on general and species-specific lipid functions as well as on the evolution of lipid structures.

This meeting continues a novel series of Euro Fed Lipid workshops on Microbial Lipids which took place before in Vienna, Austria 2010 and Bern, Switzerland 2012. It is now organised by the new Euro Fed Lipid division "Microbial Lipids".

    Antalya: Home of St. Nicholas

    Saint Nicholas was born 15 March 270 in the Greek city Myra (today Demre) in the province of Antalya. Later he became bishop of Myra. He died 6 December 343.

    Because of the many miracles attributed to his intercession, he is also known as Nikolaos the Wonderworker. He had a reputation for secret gift-giving, such as putting coins in the shoes of those who left them out for him, and thus became the model for Santa Claus.

    In his most famous exploit,a poor man had three daughters but could not afford a proper dowry for them. This meant that they would remain unmarried and probably, in absence of any other possible employment, would have to become prostitutes.

    Hearing of the girls' plight, Nicholas decided to help them, but being too modest to help the family in public (or to save them the humiliation of accepting charity), he went to the house under the cover of night and threw three purses (one for each daughter) filled with gold coins through the window opening into the house.

    During a great famine that Myra experienced in 311–312, a ship was in the port at anchor, which was loaded with wheat for the Emperor in Constantinople. Nicholas invited the sailors to unload a part of the wheat to help in time of need. The sailors at first disliked the request, because the wheat had to be weighed accurately and delivered to the Emperor.

    Only when Nicholas promised them that they would not suffer any loss for their consideration, the sailors agreed. When they arrived later in the capital, they made a surprising find: the weight of the load had not changed, although the wheat removed in Myra was enough for two full years and could even be used for sowing.

    The Institute of Nutrition of the Friedrich Schiller University of Jena invites applications for an Associate Professorship (W2) for Molecular Physiology of Nutrition.

    Research at the Institute of Nutrition is focussed on molecular nutrition. Candidates are expected to contribute to at least one of the following major research topics

    - Age-associated diseases,
    - Metabolic and regulatory networks.

    Successful candidates pursue internationally high-ranking research in the field of regulation of signalling cascades and gene regulation by food ingredients and/or their metabolites using cutting-edge bio-analytical techniques. Integrative approaches at the interfaces between genomics, proteomics and/or metabolomics, or the integration of epidemiological attempts are welcome.

    Formal requirement for appointment is a postdoctoral lecturing qualification (Habilitation) or equivalent achievements. The initial appointment as Professor will be for six years; exceptions are possible. The Friedrich Schiller University is an equal opportunity employer.     Docosahexaenoic acid from algal oil
    Certain algae produce LC PUFA including EPA and DHA as part of normal metabolism. Cultured under specific and tightly controlled conditions, these oils are commercially produced for use in infant formula, foods, beverages, and a variety of supplements.

    Discarded species in the west Mediterranean sea as sources of omega-3 PUFA
    This work is in line with the ongoing EU regulations avoiding fish discards. Five discarded fish species including axillary seabream, small-spotted catshark, sardine, horse mackerel, and bogue were evaluated as novel sources for the production of omega-3 PUFAs in different seasons.

    Mitigation of 3-MCPD and glycidyl esters within the production chain of vegetable oils especially palm oil This paper summarizes different mitigation strategies and shows their effect on lowering the amount of 3-MCPD and glycidyl esters in refined vegetable oils.

    Analysis of used frying oils
    The analysis of used frying oils to ensure quality of fried foods has become a subject of great concern for health administrations, food processors and consumers, especially since some compounds formed at high temperatures impair the nutritional value of fats and have adverse health effects.
