Dear Reader,
An EJLST special issue dedicated to the PDO and PGI virgin olive oils and table olives is aiming at bringing together the know-how on the specific characteristics of products, that command a higher commercial value in the international olive oil market.

Virgin olive oil of the best commercial category whose label bears a geographical indication recalls memories, triggers expectations and offers promises to the consumer. The inherent characteristics are measurable quantities of a plethora of aromatic constituents, of phenolic compounds that impart pungency and bitterness, colorants-carotenoids and chlorophyls- that characterize the product “looks” and also of the particular chemical composition of the olive juice of a particular variety/s grown in a defined geographical area.

In table olives, local traditionally manufactured oils are richer than the generic commercial types recognized by the IOC, due to indigenous microorganisms employed, sensorial and textural properties, appearance and color. The nutritional aspects of this Mediterranean preserved product have raised concerns among scientists and nutritionists, in cases where salt brine is involved in manufacturing and storage. As a result, innovative solutions throughout the processing and packaging line have been recently proposed to modernize the sector.

All in all, PDOs and PGIs are commercial products and every claim of provenance should be traceable using administrative and objective means. Molecular, chemical and sensorial approaches aim to serve authentication of these products and protect consumers from fraudulent practices. This issue will host review articles, research papers, short communications and opinion letters on the chemical characteristics, methods for the authentication, and socio-economical analyses for the present and future prospects of these products. Experts from the major olive tree producing countries have been invited to cover these aspects and we are really thankful for the warmth they accepted our invitation. Deadline for submissions is late May (extension may be given where needed) 2018.

Game of Thrones



b1 The HBO series "Game of Thrones was (and still is) filmed mainly in Belfast and Northern Ireland. If you have ever wondered how Westeros may look in reality there are many guided tours available to the most exiting filming locations and the studios.

Winterfell, home of the house Stark is located near Strangford, Co. Down. In reality it is called castle Ward, which has been home to the Ward family since the 16th century. The 18th century mansion house rests on a rolling hillside overlooking the Lough and surrounded by a beautiful 820-acre walled demesne with gardens and woodland.

b2 The Dark Hedges (located Stranocum, Co. Antrim) is one of the most photographed areas in Northern Ireland and a popular attraction for tourists from across the world. This beautiful avenue of beech trees was planted by the Stuart family in the 18th century and intended to impress visitors as they approached the entrance to Gracehill House. The site featured in Game of Thrones series two, doubling as the Kingsroad which young Arya Stark travelled on in the back of a cart along with Yoren, Gendry and Hot Pie - all new recruits for the Night's Watch.

Ballintoy is a village on the coast of Co Antrim with the small fishing harbour located at the end of a narrow, steep road down Knocksaughey hill which passes by the entrance to Larrybane and Carrick-a-Rede Rope Bridge. It features in season two of Game of Thrones when Theon Greyjoy returns home to Lordsport Harbour.

Dietary fatty acids are involved in the nutritional modulation of sperm energetic metabolism. Diets rich in saturated fatty acids (SFA) and low in polyunsaturated fatty acids (PUFA) seem to correlate with defective sperm energy metabolism and reduced sperm quality. Administration of PUFA, especially n-3 PUFA, determines an increase in sperm concentration, and motility, associated to an increase in the activities of mitochondrial enzymes involved in gamete energetic metabolism and to a reduction in oxidative damage.

Solid Fat Content Determination of Dispersed Lipids by Time-Domain NMR

1 TD-NMR is used to determine the solid fat content (SFC) of dispersions with high water content, a hydrocolloid as emulsifier and fat. Since the fat is molten prior to homogenization it recrystallizes during cooling. It is known that recrystallization in a dispersed system differs from bulk and TD-NMR is a helpful tool to investigate the phenomenon. The situation is demanding due to the quasi-continuous phase. With magnetization inversion, a preset 180° pulse, and a carefully chosen inversion delay, signal contributions of water, and emulsifier can be suppressed, and a quantitative determination of the SFC is possible.

2 Thumbnail image of graphical abstractAccurate ratios of canola seeds, lecithin, 1-propanol and water at a moderate temperature were used to create a nano-size canola oil lecithin-based microemulsion which was then simply demulsified at lower temperature in order to separate the extracted oil (see picture). This technique as a low energy consuming, straightforward and environmentally friendly method could be used for solublization and extraction of oil from various sources.
