Editorial

Dear Reader,

Euro Fed Lipid was founded in 2001 as federation of country organizations. At that time, lipid R&D in the Netherlands was represented by a temporary organization, while Belgium was not at all represented. However, both countries have an important oil processing and equipment manufacturing industry supported by R&D activities and analytical laboratories, while several universities deliver high level scientific research. In June 2014, a short conference was organized hosted by Unilever Research with the objective to investigate the support for starting a contact network for lipid science and technology. This network named the Benelux Lipid Network (BLN) was founded in October 2014, following the support given during the June conference. The BLN was chosen to be the representing organization for Belgium, the Netherlands and Luxemburg in EFL during the EFL board meeting in Montpellier.

The first activities of BLN are:
1. Being the host organization for the EFL conference in Ghent in 2016. The chairman and co-chairman of the Ghent conference (Roland Verhé and Karel Hrncirik) are both BLN board members.
2. Organization of an annual meeting and short conference in Ghent (originally planned for June 11th but due to circumstances delayed to August 27th). The topic for the short conference is: ”The image and functionality of the lipid supply chain”.

Lipids are important nutrients in human and animal diets but the public/political opinion of oils and fats is often negative. A few examples:
- Already since 20 years ago, trans fatty acids originating from partial hydrogenation were almost eliminated from the European diet. However, many publications and text books still mention high trans partial hydrogenated fats as components of margarines.
- Lipids score very low in the ranking of contamination incidents leading to an EU alert. This is not in line with the public perception on the importance of chemical contamination in food in general and in lipids in particular.
- The Round table Sustainable Palm Oil (RSPO) is one of the most successful sustainability initiatives in the global food chain. This did not prevent the French minister Ségolène Royal to ask for a boycott of Nutella, a palm oil containing brand of one of the leading companies in palm oil sustainability development.

This conflict between the positive initiatives of the lipid supply chain and the negative perception of public/consumers/politicians will be highlighted in presentations by academics and industrial representatives.

With these activities we hope to create a flying start for the Benelux Lipid Network.

Palazzo Pitti

Pitty The Palazzo Pitti is a vast, mainly Renaissance, palace in Florence, Italy. It is situated on the south side of the River Arno, a short distance from the Ponte Vecchio. The core of the present palazzo dates from 1458 and was originally the town residence of Luca Pitti, an ambitious Florentine banker.

The palace was bought by the Medici family in 1549 and became the chief residence of the ruling families of the Grand Duchy of Tuscany. It grew as a great treasure house as later generations amassed paintings, plates, jewelry and luxurious possessions.

In the late 18th century, the palazzo was used as a power base by Napoleon, and later served for a brief period as the principal royal palace of the newly united Italy. The palace and its contents were donated to the Italian people by King Victor Emmanuel III in 1919.
Raphael The palazzo is now the largest museum complex in Florence. The principal palazzo block, often in a building of this design known as the corps de logis, is 32,000 square metres. It is divided into several principal galleries or museums.

The Palatine Gallery, the main gallery of Palazzo Pitti, contains a large ensemble of over 500 principally Renaissance paintings, which were once part of the Medicis' and their successors' private art collection. The gallery, which overflows into the royal apartments, contains works by Raphael, Titian, Perugino (Lamentation over the Dead Christ), Correggio, Peter Paul Rubens, and Pietro da Cortona. The character of the gallery is still that of a private collection, and the works of art are displayed and hung much as they would have been in the grand rooms for which they were intended rather than following a chronological sequence, or arranged according to school of art.

8th International Symposium on Deep Frying
Better understanding, better fried products
15-17 September 2015, Munich, Germany

Munich The 8th International Symposium on Deep-Fat Frying in Munich continues the long tradition of symposia since 1973. With these series of symposia the European Federation for the Science and Technology of Lipids (Euro Fed Lipid) has established an important platform for food producer, sciences, official and commercial laboratories, marketing and consumers to present and to discuss the latest news on deep-fat frying.

Although the process of deep-fat frying is known since nearly 4000 years and it is one of the most popular processes for food preparation with an increasing market world-wide a lot of questions are still under discussion. The complex and dynamic process taking place at the surface of the food but also in the oil is still not understood comprehensively.

DGF-Rapeseedoil-Medal 2016

Medal Under the auspices of the German Federal Minister of Nutrition and Agriculture the DGF Rapeseed Oil Medal will be awarded 2016 for the 10th time for flawless virgin rapeseed oil, making it the oldest and most trusted seal of quality of this type.

Sensory properties are the most important factor for the evaluation of the quality of virgin rapeseed oils, since these can be perceived by consumers directly. High quality oils can be distinguished by a fresh seed-like aroma with a slightly nutty aftertaste.

Participants can be manufacturers and marketers of virgin, cold-pressed edible rapeseed oil, whose products are regularly available on the market. Only virgin, cold-pressed, edible rapeseed oils may participate. These oils must be obtained using gentle pressing from non-preheated raw material. Only sedimentation, filtration or centrifugation may be used to purify the oil. Further treatment, such as water vapour, is not allowed. The oils must meet the relevant food laws. Participation is also open to unfiltered oils. The oil samples must be submitted in their original containers/packaging. A number of samples may be submitted.

The evaluation of the Rapeseed oil by trained expert panels is done according to the DGF Standard Method CII-1 (14).

Price: 250 Euro +VAT per sample, bulk discounts apply.

EJLST Highlights July

Targeting lipid metabolism to starve and stop cancer cells [FREE]
ejlst1 The biology and biochemistry of tumors is quite complex, and in the last years researchers have been struggling to disentangle the "knots" of cancer cell metabolism. Recent findings indicate that modulation of lipid metabolism holds promises for the development of novel therapies. Furthermore, thanks to the advancements in lipidomics, we can expect to develop new valuable tools for the profiling and diagnosis of cancer type and stage.

Transgenic plants as a sustainable, terrestrial source of fish oils [OPEN ACCESS]
EJLST2 Napier and colleagues review the efforts and progress towards developing genetically-modified oilseed source of the long-chain omega-3 polyunsaturated fatty acids EPA and DHA for human food and the aquaculture industry.
This is an excellent review covering the first attempts to engineer plants accumulating omega-3s , the approaches to achieve accumulation of the target fatty acids in a desired form and the transition from proof-of-concept demonstrations and model GM organisms to real crops. Alternatives to plants such as engineering yeast are also discussed.

Interesterification, chemical or enzymatic catalysis
The interesterification process is one of the oil modification processes the refiner can use to alter the physical properties of oils and fats, and this reaction requires a catalyst to proceed. In this Feature, Dijkstra compares chemical and enzymatic catalysis and discusses the mechanisms, flexibility and yields.
