The 11th GERLI lipidomics meeting will be held from Sunday October 25 to Wednesday October 28, 2015, in the Strasbourg area,
at the conference center «Le Bischenberg» in Bischoffsheim, a charming village surrounded by vineyards, at the foot of the Vosges mountains.
Bischoffsheim is linked by rail and highway to Strasbourg, the capital of Alsace and Europe, in the heart of the Rhine Valley at the
crossroads of France, Germany, and Switzerland.
The 11th GERLI lipidomics meeting «Lipids in Agronomy, Health and Disease» is part of a series of annual international conferences
covering all aspects of lipid research, from advances in basic science to knowledge-based economy and technology, and -most importantly- human

Bistecca alla Fiorentina

Florence is definitely a city for meat lovers: we have many specialties that attract foodies, but assured meat is never missing
in the menus.
T-bone steak is one of the most famous dishes you can find almost everywhere in Florence, known simply as Bistecca alla Fiorentina.
The name refers to the particular cut of the meat. According to the "rules", a Fiorentina steak should be from the Chianina cow
(a breed which comes from the Valdichiana in Tuscany), but as it's quite expensive and Chianina cows are not numerous,
there are many places where you can have a steak at a slightly lower price.
A few things to know if you want to order a T-bone steak
The size of this piece of meat is... huge! You are supposed to share it with other dining companions. Only big-stomach men
can really eat the entire steak on their own as even the thickness of the steak is quite impressive. This aspect, that it is
quite thick, added to the fact that locals only cook the bistecca for few minutes (3-4 minutes per side, to be precise),
might have you thinking it is undercooked.
Well it is, but that's the way it is supposed to be! Don't ask to cook it more as Florentines get upset if you don't appreciate the
bistecca alla Fiorentina as it should be, quite rare.

This year, for the first time, the 8th International Symposium on Deep Frying
will be held as part of the oils+fats. The symposium is
organized by Euro Fed Lipid. Frank Amoneit, Managing Director of Euro Fed Lipid, commented: "Following on from San Francisco, Munich is now also
added to the venues for our unique global series of conferences. This will help us to familiarize companies that are involved in deep
frying more closely with the themes of oils+fats."

The 8th International Symposium on Deep Frying
looks at aspects of deep frying, with the aim of optimizing and enhancing understanding of
the frying process, and thereby strengthening the market for deep-fried products in future.

Regioselective synthesis of diacylglycerol rosmarinates and their antioxidant activity in fibroblasts
Phenolic compounds are potent antioxidants both in vivo and in lipid formulations. However, their use in such systems is often limited
by low solubility and stability. To overcome this issue, phenolics can be modified by lipophilization, which also improves their penetration
through lipid bilayers in cells. Durand, Villeneuve and colleagues chemo-enzymatically synthesized a series of
phenolipids derived from rosmarinic acid and assessed their antioxidant potential in fibroblasts overexpressing
reactive oxygen species. When compared with vitamins E and C, 1,2-diacylglycerol rosmarinate esterified with two lauryl
chains exhibited a higher ability to reduce ROS levels.
Dietary sources, current intakes, and nutritional role of omega-3 docosapentaenoic acid [Open Access]
Health benefits of marine oils and long-chain omega-3s contained therein are widely recognized, but although fish oils contain more than
40 fatty acids, most studies focus on eicosapentaenoic and docosahexaenoic acids. Docosapentaenoic acid (DPA, 22 : 5n-3) is the third most
prevalent LC omega-3 in fish oil, and it is also present in human tissues and human milk. Byelashov, Sinclair and Kaur review the dietary
