    virgin rapeseed oil is getting more and more important in nutrition habits as well as in high quality industrial products due to its high content of omega-3-fatty acids and its nutritionally valuable free fatty acid composition.

    But the oil quality depends on the influences during the production process, starting with the raw material, harvesting, storage conditions as well as the processing parameters and the packaging process. One very important factor to characterize the quality of virgin rapeseed oil is the sensorial impression, which is expressed by a seedy, nutty taste without any deviation and off-flavours.

    To evaluate the quality in the market and to help producers to strengthen their quality assurance, the German Society for Fat Science (Deutsche Gesellschaft für Fettwissenschaft, DGF) has trained and now approved two well-trained panels of sensory experts in the North and the South of Germany. A training period over 2 years was necessary to build up knowledge and vocabulary to do good sensory evaluation with the method of the DGF.

    The DGF-sensory method is not only an instrument to do sensorial quality description, but also the basis for the DGF-Rapeseed oil medal, which is yearly a possibility for oil traders and producers to point out a good quality of their virgin rapeseed oil.

    The DGF-Rapeseedoil-Panel North is located at the KIN Food Institute in Neumuenster, while the DGF-Rapeseedoil-Panel South is hosted by the muva in Kempten.

    The Theatre of Aspendos

    Aspendos, north-east of Antalya, is known for having the best-preserved theatre of antiquity. With a diametre of 96 metres, the theatre provided seating for 7,000.

    The theatre was built in 155 by the Greek architect Zenon, a native of the city, during the rule of Marcus Aurelius. It was periodically repaired by the Seljuqs, who used it as a caravansary, and in the 13th century the stage building was converted into a palace by the Seljuqs of Rum.

    The high stage served to seemingly isolate the audience from the rest of the world. The scaenae frons or backdrop, has remained intact. The 8.1 metre sloping reflective wooden ceiling over the stage has been lost over time. Post holes for 58 masts are found in the upper level of the theatre. These masts supported a velarium or awning that could be pulled over the audience to provide shade.

    Until recently the theatre was still in use for concerts, festivals and events.

    European Journal: Highlights November

    LC-MSMS analysis of acetamiprid residue in crude palm oil
    Acetamiprid is an insecticide candidate for use in oil palm plantations to control bagworms and leaf eating caterpillars. Yeoh and Chong have developed a method for acetamiprid residue detection and quantification in palm oil.


    Stabilization of meat suspensions by organogelation
    Lupi et al. present the results of an organogelation study of traditional Italian spicy spreadable sausage. The effects of lecithin and monoacylglycerols were investigated by destabilizing the modified suspensions and comparing their rheological characteristics and oil loss to those of the unmodified systems.


    Analysis of steryl glucosides in olive oil
    Gómez-Coca et al. have developed a straightforward protocol for the determination of steryl glucosides in olive oil. This method, which has a great potential for automation, can be used to provide an additional identity parameter and a blend indicator.


    Potential clinical implications of probiotics and prebiotics
    Wall et al. discuss in a recent Feature article in Lipid Technology the potential of nutritional modulation of gut microbiota for modification of host fatty acid composition.
